Do potatoes contain LTP proteins?

While potatoes are a global dietary staple, containing moderate amounts of protein and fiber, they also contain a family of small proteins known as LTPs. A study published in March 2023 identified 39 members of the lipid transfer protein (LTP) family in the potato plant, revealing their role in plant stress responses, but the risk for human allergy depends on individual sensitization and which specific LTPs are consumed.
