What is an Insoluble Starch?

Approximately 75-80% of native starch consists of amylopectin, a complex branched polymer that makes the substance largely insoluble in cold water. An insoluble starch is essentially any starch that does not readily dissolve in cold water due to its intricate structure and high molecular weight.
