Per unit of weight, cooked bacon has more calories than uncooked bacon, which may seem counterintuitive until you understand the science of fat rendering. While cooking doesn't remove the total calories from the initial slab of meat, it significantly concentrates the energy in the remaining cooked portion, which is mostly a dense mix of protein and fat.
