According to a U.S. Department of Agriculture study, even baked dishes can retain a significant amount of their original alcohol, with up to 5% remaining after two and a half hours of cooking. For no-bake desserts like rum balls, the truth is much simpler: the alcohol remains because there is no cooking process to evaporate it.
