Hypertonic solutions are, by definition, solutions with a higher concentration of solutes compared to another solution, and in many common contexts, this solute is salt. This means that compared to bodily fluids like blood, a hypertonic saline solution does indeed have a significantly higher salt content.

Over a century ago, scientist Franz Hofmeister observed that different salts had varying abilities to precipitate proteins from solution. This initial discovery revealed that salt's influence on proteins is not simple but depends heavily on concentration and ion type, fundamentally changing how salt affects protein stability.

In a 2015 test, pickle batches with different salt concentrations proved that brine with 3.5% salt resulted in a superior flavor balance compared to 2.5% or 4.5%. The precise amount of salt in a brine depends heavily on its intended use, such as for flavoring, fermenting, or long-term preservation.
