Originally a way to use up leftover mozzarella scraps in Italy's Puglia region, burrata was created in the early 20th century. The resulting fresh delicacy combines a mozzarella shell with a rich, creamy interior, and yes, burrata is indeed made from cow's milk. While its production shares similarities with its cousin mozzarella, it's the luscious filling that sets it apart.

While burrata cheese is made from cow's milk and contains lactose, the amount is significantly lower than a glass of milk, with a typical serving offering between 1 and 6 grams. Its fresh nature and creamy center give it more lactose than aged hard cheeses.
